Ingredients:
Onion - 1 small and 1 medium
Cloves - 2
Ginger - 2 inch
Oil - 5 tbs
Butter - 1tbs
Turmeric - 1 tsp
Red Chilli Powder - 1 tsp
Black pepper p0wder - 1/2 tsp
Cumin and Coriander Powder - 1 tsp
Garam Masala - 1tsp
Tamarind Chutney / Jaggary- 2tbs
Ginger-chilli paste - 1 tsp
Coconut milk - 1 can
Cooked Spaghetti - 1 bowl (200grams)
Mix Vegetables (your choice) - 1 bowl (Small diced)
Crushed roasted Peanut - 1tbs
Spring onions - 1 medium string
Burnt garlic - few slices
Cilantro - 1 tsp
Red chilli flakes - 1tsp
Lemon Juice - 1tbs
Onion and Lemon - few slices to garnish
Salt as per taste
Procedure:
* Grind a medium sized onion, cloves and ginger into paste. Keep aside
* Take a pan saute a small sliced onion and butter, till caramelised. Keep aside
* In the same pan heat oil in slow to medium flame
* Add the above grounded mixture and saute it for a minute
* Now add turmeric, red chilli powder, cumin and coriander powder, black pepper powder, garam masala, tamarind chutney / Jagarry, ginger - chilli paste and salt as per taste
* Saute for 3 - 4 minutes
* Add coconut milk and give it a good mix
* Add all the vegetables
* Cover and let it simmer for 10 minutes
* In a serving plate, add 2 medium portions of rolled spaghetti in the centre
* Pour the above hot gravy on the sides
* Squeeze lemon juice over it
* Garnish the plate with burnt garlic, crushed peanut, cilantro, spring onions, caramelised onion , red chilli flakes, and fresh sliced onion and lemon.
