Ingredients for dough: * All purpose flour - 1 cup * Cooking Oil - 1 tsp * Salt - 1 tsp * Water - enough to make dough Ingredients for stuffing: * Onions - 1small * Purple cabbage - 100 grams * Spring onions - 3 to 4 strings * Carrots - 1 big * Mushroom - 5 * Garlic clove - 1 big * Ginger chilli paste - 1tsp +/- * Black pepper - 1/4 tsp * Chilli flakes - 1/4 tsp * Soy sauce - 2 tbsp * Lemon juice / vinegar - 1tsp * Salt - as per taste * Sesame Oil - 1tsp Preparation: 1 - Dough * Place the flour in a bowl * Add salt and oil to the bowl * Add water and knead the dough, not too tight nor too loose. * Let it rest for 15 minutes. Preparation : 2 - Stuffing * Grate the carrots and the cabbage.
* Cut the onions, mushrooms and spring onions into small pieces,
* Make the ginger, garlic and chilli paste.
* Take a pan and heat the sesame oil, sauté the ginger, garlic and chilli paste on low heat for few seconds.
* Now, add the cabbage and the carrots and let it cook for a minute, then add the rest of the vegetables and sauté till they are half cooked. This will take another minute or two.
* Add salt, lemon juice or vinegar and keep the flame high - let all the water evaporate.
* Finally add soy sauce. Remove it from the flame and let it cool for 15 minutes.
Making Gyoza:
* Make small spheres of dough * Dust the work surface with some flour then, roll the spheres into thin small circles * Place the parchment paper in between the thin circles to avoid sticking then, cover them with a towel while stuffing. * Fill the centre of dough circle with the prepared stuffing. Dab some water over on the circumference and start shaping them by folding and pinching the sides together. * Repeat each step till they are all done. Cover them with a towel to prevent from drying. * Use a double boiler and coat the inside with some oil and add water in the bottom. Place several pieces of Gyoza inside while leaving some space in-between to prevent sticking and cover the lid. Let them steam for 5 - 7 minutes. * Take a nonstick pan and add 2tbs of butter, place the steamed Gyoza and cook till golden brown from the outside, takes a minute. Ingredients for home made sauce: * Water - 1cup * Corn flour - 2tsp * Salt as per taste * Black pepper 1/4 tsp * Chilli flakes 1/4 tsp * Sweet-sour (ready made) sauce - 2tbs * Tabasco 10 drops * Soy sauce 2 - 3 tsp * Garlic clove - 1 * Spring onions - 1 string * Sesame seeds - 1tsp Making the Homemade Sauce: * Take a pan and add corn flour and water, mix them properly till there are no lumps. * Add all the ingredients except for tabasco and soy sauce. * Keep on low heat till the liquid begins to thicken. * Remove the pan from the stove and add the remaining ingredients and mix
* Garnish with sesame seeds and spring onions.
