Enjoy The Taste With Coffee or Tea - Cake Rusk

Eggless Cake Rusk


Ingredients:


APF / All Purpose Flour - 3 cup

Oil - 1 cup

Sugar - 1 1/2 cup

Milk - 2 cup

Vanilla extract - 1 tsp

Baking Powder - 1 tsp

Baking soda - 1/2 tsp

Salt - 1/4 tsp

Vinegar - 1 tsp


Procedure: To make butter milk:


* In a bowl add milk and vinegar

* Give it a stir and keep aside for 15 minutes


Step 1:


* Preheat the Oven for 10 minutes at 180 degree celsius


Step 2: To prepare the cake:


* In another bowl, mix well sugar and oil, till the sugar dissolves, approximately 2 minutes, till the mixture changes its colour

* Add to it, flour, baking powder, baking soda, butter milk, vanilla extract and salt

* Mix well and pour the above batter into the greased baking tray

* Place it into the oven for 45 minutes at 180 degree celsius

* Remove it from the oven and let it cool completely


Step 3: To prepare Cake Rusk


* The next day slice them into rectangles

* Preheat the oven to 180 degree celsius for 10 minutes

* Place the slices in the baking tray leaving some space in between each of them

* Reduce the heat of the oven to 130 degree celsius

* Place the tray inside and let it bake for one hour

* Slices may not look hard but leave them open for half an hour, they will harden

* The home made cake and cake rusk is ready to enjoy with tea or coffee


Variation:


* Vanilla extract can be substituted with cardamom powder or indian tea masala

* Add nuts of your choice.

* Carrot Juice can be substituted instead of milk


Cake Rusk with Egg :


Ingredients:

APF / All Purpose Flour - 3 cup

Oil - 1 cup

Egg - 3 Large

Sugar - 1 1/2 cup

Milk - 1 cup

Baking Powder - 1/2 tsp

Vanilla extract - 1 tsp

Salt - 1/4 tsp


* Preheat the Oven for 10 minutes at 180 degree celsius


Procedure:


Step 1: To prepare cake


* Beat the eggs in the mixing bowl with sugar and milk for 3 minutes

* Add oil and beat again for another 5 minutes,

* Add to it, flour, baking powder, salt and vanilla extract

* Mix well and pour the batter into the greased baking tray

* Place it into the oven for 45 minutes at 180 degree celsius

* Remove it from the oven and let it cool completely


Step 2: To prepare Cake Rusk


* The next day slice them into rectangles
