Healthy Tomato Pancakes


Ingredients:


2 medium size roasted tomatoes

1/2 cup Semolina coarse

1 tbs Rice flour

1 finely chopped Onion

1/4 cup finely diced Red and Green bell pepper

1 tsp Ginger and Chilli paste

A pinch of Baking soda

1 tsp Lemon juice

200 ml Water

Salt to taste


Procedure:


* After roasting, remove the skin of tomatoes

* Add some water and make a smooth paste using a food processor

* Remove the paste in a mixing bowl

* Add the rest of the ingredients and mix well

* Let the batter rest for half an hour

* If you find that the batter is too thick then add water to make it into pouring consistency

* Grease the pan and spread the batter like pancakes

* Cover it for a minute and let it cook

* Flip it and let it cook on the other side


Ready to eat and enjoy with green wine and chutneys.


Variation :


Any veggies of choice can be added, just pre-cook them before making the pancakes, since they don't require too much cooking time.


They can be made thicker if more veggies are added. Just the cooking time will take a bit longer.
