Feel like snacking? Get your hands on this traditional Gujarati recipe with Indian Masala Tea !!

Bhaat na Muthiya



Ingredients:


2 cups cooked Rice / leftover Rice

1/2 cup Besan / Gram flour

¼ tsp Turmeric

1/2 tsp Kashmiri red chilli powder

½ tsp Coriander & Cumin powder

1/2 tsp Ajwain/ Carom seeds (if)

½ tsp Hing/ Asafoetida

Salt as per taste

1 tbsp Ginger & Chilli paste

1 tsp Baking soda

1tbsp Lemon juice

1 tbsp Oil

2 cup Lauki / bottle gourd grated or mixed vegetables like Carrot, beetroot, cooked broccoli, courgette, onion, garlic, corn, cooked and smashed red kidney beans, cabbage


Instructions :


  • Preheat the double boiler for 5 min.

  • In a bowl take all the ingredients listed above.

  • Combine the ingredients, make sure the spices are well mixed to make a dough

  • Divide the dough into medium balls and roll them into cylindrical shape

  • Inside the double boiler, grease the plate, place the rolls, leaving some space in between to cook properly

  • Cover and steam them for 15 minutes

  • Check with a toothpick whether they are well cooked

  • Remove them and transfer into a plate and let them cool

  • Once cooled cut them into thick circular pieces


Tempering:


Ingredients:


2 tbsp oil

1 tsp mustard seeds

2 tsp sesame seeds

A pinch of hing / asafoetida

Few curry leaves

2 tbsp coriander leaves finely chopped for garnish



* In a pan, heat the oil and sizzle mustard seeds and sesame seeds, then add a pinch of asafoetida and a few curry leaves

* Finally add the sliced muthiya and cover it with a lid to make them warm from inside

* Let it roast on both sides until they turn crispy. **add a bit of more oil if needed

* Mix gently and garnish with coriander and sesame seeds
