Out of the million Portuguese pastries you can't go wrong with the Classical Pastel De Nata

Ingredients:


250 grams - Whole milk

150 grams - Sugar

75 grams - Water

30 grams - All purpose flour

4 - Egg yolk

1 to 2 - Cinnamon stick

3 to 4 - Lemon peel

300 grams - Puff Pastry sheet (readymade)


Pre-Preparation:


* Take the puff pastry and spread some water on top, roll it and cover it in cling wrap.

* Refrigerate it for 10 minutes.

* Then, cut the roll into 3 inch pieces

* Take 1 piece and with your thumbs shape it is as a shell inside a muffin tray, using water

* Repeat until all of them are done.

* Refrigerate the tray for 10 minutes


Step 1 : Sugar Syrup

* Add water and sugar in a pan

* Mix just once to get a homogeneous mixture and place it on the stove for 3 minutes till it gets pearl drops, do not stir it again

* Once done, remove and keep aside


The Sugar Syrup is ready


Step 2 : Milk Cream


* In a small bowl, dissolve the flour with some milk to get a thick paste without lumps

* In another pan, boil the rest of the milk, lemon peel and cinnamon stick

* once it starts boiling, take 2 - 3 tbs of above milk mixture and mix well with the flour paste to get lump free mixture

* Add this to the boiling milk, reduce the flame and mix it to get a thick paste

* Remove it from the stove


The Milk Cream is ready


Step 3: Egg yolk cream


* Now, slowly add the sugar mixture and mix continuously with the milk cream

keep aside for 10 minutes

* After, add 2 -3 tbsp of it to the egg yolks, mixing continuously to prevent the egg from cooking

* Finally add this mixture to the rest of the milk cream and incorporate them properly

Now pour it onto the sifter and sift to remove any lumps, lemon peel and cinnamon sticks from the cream


The Egg Yolk cream is ready


Assembling the Pastry:


* Preheat the oven to maximum

* Remove the muffin tray from the fridge and pour the Egg Yolk Cream to 3/4th of the each cup

* Place the tray inside the oven for 10 - 12 minutes or till the outer layer begins to burn

* Remove them from the oven and place it on the rack to cool

* Serve them hot / cold and don't forget to sprinkle with some icing sugar and cinnamon powder



The famous Portuguese pastry, Pastel de Nata is ready to eat with an expresso or bica, as they say in Portugal.
