Missing some Indian street food? Experiment making Pani Poori

Ingredients to make Poori


1/2 cup Semolina/ Rava / Sooji

1 tbs All purpose flour/ Maida

A pinch of Eno / Baking soda

1/2 tsp Salt

1/4 cup Luke warm water


* Mix the above ingredients and knead a smooth dough by adding very little water at a time for few minutes

* Cover the dough with a wet cloth

* Let the dough rest for 30 minutes

* After 30 minutes knead it again and divide the dough into small spheres

* Roll each sphere into a thin circle

* Cover them with a wet cloth to prevent from drying

* Heat oil in a pan and fry the pooris on medium flame on both side until they get crispy and puffed.

* Serve with the potato fillings and home made sweet and spicy water.


Fillings for Poori :

2 to 3 medium sized Boiled potatoes

1 small to medium Onion

1/2 cup boiled Mung beans

1 tbs chopped Coriander leaves

1 tsp roasted Cumin powder

1 tsp Chaat masala powder

1/2 squeezed Lemon juice

Salt as per taste

* Chop the potatoes into small pieces

* Add finely chopped onions, coriander leaves, cumin powder, chaat masala powder, boiled Mung beans

* Add black salt or regular salt and make a good mixture

* Add Lemon juice, mix well and keep aside.


Ingredients to make Spicy water :

1 cup chopped Mint leaves

1/2 cup chopped Coriander leaves

1 inch Ginger

5 to 6 Green chilli

1 tsp roasted Cumin powder

1 tsp Chaat masala powder

1/2 squeezed Lemon juice

1/4 cup Water *for grinding*

Black salt or regular salt as per taste

* In a blender add all the above ingredients and add water accordingly to make it into a fine paste

* Transfer the paste to a large bowl

* Add more water in the bowl to dilute the consistency

* Mix well and check its taste

* Add more salt or other spices if needed

* Refrigerate the spicy water, till cold


Ingredients for Sweet water:

1 cup Tamarind puree

1/2 cup seedless Dates

1/4 cup grated Jaggery

1 tsp Cumin Powder

Salt as per taste

2 cups water

* In a pressure cooker add tamarind puree, dates and water

* Cook it for 10 min or till the dates are cooked

* Add the rest of the ingredients while the above ingredients are still warm

* Grind it to get a thick paste

* Transfer it to jar and add another cup of water to dilute

* Give it a good mix and check the taste, add more salt if needed

* Refrigerate the sweet water


Assembling:

* Gently tap the centre of a poori to make a small whole

* Add the potato filling

* Finally add the spicy and sweet water, using a spoon

* And its ready!
